Roasted Prairie Chicken

2 Prairie chickens or 2-2 pound frying chickens
Cowboy Flavor Grilling and Roasting Spice Blend
2 cups diced celery
2 cups onion, chopped
3-4 Tbsp. fresh sage
6 Tbsp. honey
4 small sweet potatoes
2 Tbsp. chopped fresh chives
1 Tbsp. hulled sunflower seeds, slightly browned

Preheat Dutch oven, or 375 oven.  Rinse chickens and pat dry. Season and pepper cavities. Mix celery, onion and sage together and stuff the birds. Truss, then brush each with 1 Tbsp. honey. Place into Dutch oven or a roasting pan in a 375 oven.
Scrub potatoes and prick with fork several times and place around chickens.Roast for 20 min. per pound. 
Baste occasionally with drippings during cooking.
When potatoes are done, push ends in to plump open. Drizzle with remaining honey and sprinkle with sunflower seeds and chives.
Season and pepper to taste
Total cooking time 45-50 min

Serves 6-8
