This is a great breakfast anytime, but it is a lot of fun when your are camping out.
Go for the gusto and make some biscuits and honey too!

Eggs in a Haystack

Ingredients:
6 eggs
4 potatoes
1 diced onion
1 tsp. Cowboy Flavor Seasoning
¼ cup olive oil
¼ stick butter

In a 16” Dutch Oven or heavy skillet:
Over medium heat, brown onions in olive oil and butter, add the potatoes, fry and stir often until done.
With a dipper, push down on potatoes just enough to make 6 “nest holes” being careful not to go clear to the pan.
Crack an egg into each hole.
Sprinkle with seasoning and place a  lid over the pan. If you are using a Dutch oven, use top heat only.
Continue for 3 minutes for an “over medium” yolk, (still runny). Cook longer for a firmer yolk. Check while cooking.
