Mango Lobster Salad on a Bed of Cucumber

1 pound lobster, cooked or BBQ’d
2 mango’s, diced into 1/2 inch pieces
3 green onions, sliced thin, and into the tops by 1 inch
2 avocados diced into 1/2 inch pieces
2 cucumbers, sliced very thin
1 cup mayonnaise
Cowboy Flavor Seasoning to taste
Pepper to taste
1/4 cup finely snipped parsley

In a bowl, mix all together except cucumber and parsley.
Arrange cucumber slices on a plate and spoon the lobster on top. Sprinkle with snipped parsley. Garnish with lemon

Serves 6-8
